A look back at our first competition

It’s been more than a month since my first-ever fitness competition, the
UFE Spring Bash – a generous amount of time for thoughtful
self-reflection, lengthy inner monologues debating the pros and cons of
the sport and, thankfully, a lot of wine and buttered white bread.

Living vicariously through others is what I do best – that’s why I
purchase a paper mill’s worth of tabloid magazines every month, linger
on random reality shows while changing the channel, and have adopted an
alter ego named “Roxie Rocker.” (Despite the scandalous alliteration,
she is actually a high-powered female lawyer in a male-dominated firm
and not a stripper, thank you very much.) -

If you’ve seen the Ellen Page flick Whip It, you already know that derby
girls are a force to be reckoned with. And perhaps because of their
recent pop-culture exposure, roller derbies are rapidly gaining an
underground cult following, attracting women from all walks of life who
want to expend some pent-up aggression by whipping eight-wheeled
teammates around a circular track. -

My mom's Paleo Apple Butter Muffins
were a real hit both in the office and at home with oxygenmag.com blog
readers. As I mentioned in my first blog post, my dad switched to a
Paleo lifestyle – otherwise known as “The Caveman Diet” a couple of
years ago and my mom has been creating delicious recipes to accommodate
him, and his sweet tooth, ever since. -
Crunchy Salad Toppers

Call me boring but I eat a big colorful, protein-packed salad every day
for lunch (that’s my actual trusty container you’re looking at!). My
salads are usually a rotation of spinach or mixed greens + chicken
breast or tuna + tomatoes + cucumbers + bell peppers + raw nuts or bean
sprouts + balsamic/olive oil (3:1 ratio).
