A Clean Superbowl Chip Dip

Don’t let your diet take a fumble this Sunday. It’s estimated that the average American will eat nearly a day’s worth of calories in the form of junky snacks on Sunday alone. Your healthy fix? Serve up a big bowl of this lean, mean green dip alongside some whole grain crackers and vegetable sticks. The healthy fats from the avocados will help to stabilize rocky blood sugar levels that can lead to mindless munching. Enjoy!
Avocado-Cucumber Dip
Ready in 10 minutes • Makes 4 cups
- 1-2 ripe avocados (2 for a more creamy texture)
- 1 large cucumber
- 1/3 cup extra virgin olive oil
- 2 cloves garlic, minced
- 3/4 cup herbs (try fresh cilantro or dill)
- 1/4cup lemon juice
- Sea salt and fresh ground black pepper
- Peel and cut avocadoes and cucumber into cubes.
- Puree the olive oil and garlic in a blender until smooth. Add herbs, avocado and cucumber chunks, and lemon juice. Blend until smooth, then season to taste with salt and pepper.
