Dream Job

“To say the last couple of years have been amazing is an understatement,” says Erin of her exploding on-stage career. “I never thought I’d go from working nine to five in real estate to traveling the world competing in Figure.” Since 2010, she’s placed in the top two in every show she’s entered, landed herself on two Oxygen covers, and penned a deal with Dymatize Nutritional Supplements as a member of their team of elite athletes. “I have been using Dymatize since college, so it’s so exciting to be representing a product I believe in.”

Erin's Abs-Popping Meal Plan

Our cover girl stays fueled with five to six small meals per day.

Meal 1: 5 egg whites + 1/2 cup oats
Meal 2: Dymatize Elite Gourmet Protein shake + 15 almonds
Meal 3: spinach salad + 4 oz chicken + 1/2 cup cooked brown rice
Meal 4: 4 oz cooked ground turkey + 4 rice cakes + spinach salad with vinaigrette
Meal 5: 4 oz grilled chicken or fish + steamed veggies or salad
Meal 6: 1 scoop Dymatize Elite Casein protein mixed with water or light almond milk + 1 tbsp natural peanut butter

Still Ahead

Erin is gearing up for another busy and successful year with a book on functional training and a DVD in the works, and of course, continuing to keep her rival on the Figure stage, Nicole Wilkins, on her toes. “My goal is to win the Olympia in September. As for the Arnold, I’ve been second twice now and I’d love to win, but I just plan on continuing to improve, getting up on stage and looking my best.”

Erin’s Polenta Fries with Spicy Dip Ready in 50 minutes • Makes 4 servings

My Favorite Recipe

Fries:

1 tube of polenta, cut into “fries”
Coconut oil spray
Sea salt and pepper, to taste
1⁄2 tsp baking soda

Chipotle Dipping Sauce:

4 tbsp sugar-free ketchup
4 wedges Light Laughing Cow cheese
Chipotle powder
  1. Preheat oven to 350ºF.
  2. Lightly coat polenta fries with coconut oil, pepper and sea salt, to taste.
  3. Spread on a baking sheet and bake for 40 minutes, turning once.
  4. In a small bowl, microwave dipping sauce ingredients for 30 seconds, then stir.
