Fran’s Pico de Gallo Chicken Makes 2 servings
My Favorite Recipe
Ingredients:
2–5 oz chicken breast
1/2 cup brown rice
3 Roma tomatoes (diced)
3 green onions (sliced)
Freshly squeezed juice from half a lime
Freshly squeezed juice from half a lemon
1 sliced jalapeño
1 tbsp fresh cilantro (chopped)
1 tbsp olive oil

Instructions:
  1. Combine tomatoes, onions, lime juice, jalapeño and cilantro in a medium-sized bowl. Cover and refrigerate to let flavors blend.
  2. Cook the rice according to package directions.
  3. Grill or bake the chicken breasts.
  4. Spoon the rice onto 2 plates and top with the chicken.
  5. Divide the Pico de Gallo equally on top of each piece of chicken. Finish
    with a squeeze of fresh lemon juice.
