To say she’s come a long way would be an understatement. A decade ago, Jennifer Nicole Lee was an overweight, junk food-aholic, without a clue as to how to change her life. Today, she’s become a fitness model, author, Team BSN Athlete and now three-time Oxygen cover girl known around the world as JNL.

Finding Fitness

To look at this 36-year-old fitness model now, it’s hard to believe she once had an extra 80 pounds of flab and post-baby weight on her 5'8" frame. “My journey started when I became a mom,” she says. “I was sitting on my couch with my babies around me, a pizza and doughnuts, and it just hit me like a wall: I was not happy this way.” So, Jennifer used every resource at her disposal, including Oxygen magazine, to get educated and motivated. She even hung pictures of past Oxygen cover girls in her pantry.

What’s Next

Her first cookbook based on thefunfitfoodie.tv is currently in the works, and next month, she’ll be hosting the second annual JNL Fusion World Conference & Fitness Revival – a wellness retreat and an opportunity for people from around the world to become certified in JNL Fusion training. But above all that, she wants to continue to reach other women with her personal story and motivate them to change their lives the way she did. “Connecting with my fan base and seeing that what I do really does matter motivates me to continue.”

Shrimp Ceviche Ready in 2 hours • Makes 6 servings

My Favorite Recipe When she’s hungry for a dish that’s full of flavor and packed with satiating protein, JNL whips up her shrimp ceviche. It’s low-carb, low-fat and so easy!

  • 1 lb cooked shrimp
    Juice of 1 lemon
    Juice of 1 lime
    1/4 cup of virgin olive oil
    Handful of cilantro
    Dash sea salt and pepper
    1 cup each pre-diced tomatoes, tri-color peppers and onions
    3–4 sweet banana peppers, chopped (use multi-colored)
    1 tsp of pre-minced garlic
    Dash Tabasco or your favorite hot sauce
    Sliced avocado to garnish
  1. Mix all ingredients together.
  2. Chill in refrigerator for 1 to 2 hours.
  3. Serve with brown rice, whole-grain baked chips, and or whole wheat crackers.
  4. Top with sliced avocado.
