Oxygen Ambassador Amelia Ricci has these plenty of these protein muffins around during the holidays! They’re perfect for an on-the-go snack, a warm-out-of-the-oven treat for guests and a protein-packed breakfast.
Amelia Ricci’s Living Beauty Protein Muffins
Makes 12
Ingredients
- 1 medium banana
- 150g blueberries and raspberries
- 70g rolled oats or quinoa (for gluten-free)
- 60g protein powder
- 2 teaspoons cinnamon
- 2 tbsp Natvia stevia
- ½ teaspoon gluten-free baking powder
- 4 egg whites
- 1 pinch of salt
Directions
1) Mix dry ingredients together in a bowl.
2) Add egg whites and around 1/4 to 1/2 cup water as needed.
3) Stir until mixed well.
4) Sprinkle in berries.
5) Scoop into a 12 hole muffin tray lightly coated with cooking spray.
6) Bake at 175 degrees for 20 minutes
Macros (per muffin) 96 cals, 7g protein, 1.5g fat, 12g carbs
