Since shedding over 70 pounds of post-baby weight, Chady Dunmore has become known as more than just “mom.” She has taken on the roles of fitness model, personal trainer, two-time WBFF Pro Bikini World Champion, author and even recording artist.

The last few years have been a whirlwind for Chady, and she isn’t showing signs of slowing down. Last year, she launched her own fitness camps and just recently, became the Fitness Curator for the Andaz West Hollywood hotel, creating programs and in-room Fit Kits for guests to stay in shape on the road. If that’s not enough, she’s written two books she hopes to publish this year. She admits that balancing it all isn’t easy. “I have to schedule everything, every hour. If it’s not in my agenda, it won’t happen. When I get overwhelmed, I just say to myself, ‘Chady, this is your moment. Look at all you can do when you don’t limit yourself.”

Once inspired by fit moms like Kim Dolan Leto, it’s now Chady’s turn to show a generation of women that motherhood doesn’t mean you can’t have a rockin’ body. “It’s doable if your really want it,” she says. “I don’t always have time to work out, so I walk everywhere, and if I have a spare 45 minutes to work out, I make it happen.” But no matter what, her daughter Sofia, who turns six this month, comes first. “When it’s time to be mommy, everything else has to wait.”

With a hectic schedule and a weakness for diner cheeseburgers, Chady has to stick to a strict, clean diet to avoid binging or grabbing something unhealthy while on the go. To stay focused, she schedules two cheat meals a week, one of which is a pancake date at Ihop with her daughter. “It’s all about moderation, and it’s important for Sofia to see that.”

My Favorite Recipe: Sweet Potato Protein Pancake

These days, Chady loves starting her mornings with these too-good-to-be-clean protein pancakes, inspired by her pal Emily Zaler, creator of The EZ Whey Cookbook.

Ready in 10 minutes • Makes 1 serving

  • 3–4 oz sweet potato
  • ¼ cup pumpkin
  • ¼ cup oats
  • 1 scoop vanilla protein powder
  • 3 egg whites
  • 1 tsp vanilla extract
  • ½ tsp baking powder
  • 1 tsp Stevia
  • 1 tsp cinnamon

Microwave the sweet potato until it is soft. Blend all the ingredients in a blender until smooth. Pour the batter into a pan and cook like a pancake. Top with sugar-free maple syrup or natural nut butter (optional).
