Pumpkin Spice Overnight Oats

Pumpkin Spice Overnight Oats

Makes: 1 Serving

INGREDIENTS

  • ½ cup coconut milk
  • ½ cup pure pumpkin puree
  • ¼ cup old-fashioned rolled oats
  • 1 tbsp pure maple syrup
  • ¼ tsp pumpkin spice
  • ¼ tsp ground cinnamon

DIRECTIONS

  1. In small bowl, combine pumpkin puree, maple syrup and pumpkin pie spice. In another bowl, mix rolled oats, coconut milk, and ground cinnamon.
  2. Grab a Mason jar and put half of pumpkin mixture at the bottom. Add oats and then top with remaining pumpkin puree.
  3. Store in fridge overnight and enjoy topped with fresh granola.
Pumpkin Spice Latte

Pumpkin Spice Latte

Makes: 1 Serving

INGREDIENTS

  • 1 cup unsweetened vanilla almond milk (or milk of your choice) steamed
  • 2 tbsp pumpkin puree
  • ½ tsp vanilla
  • ½ tbsp maple syrup
  • 1 cup brewed coffee (or 1-2 shots espresso)
  • sprinkle of cinnamon and pumpkin pie spice

DIRECTIONS

Whisk together coffee, maple syrup and vanilla. Top with steamed milk and cinnamon and enjoy!

Pumpkin Spice Muffins With Maple Cream-Cheese Frosting

Makes: 9 to 12 medium-size muffins

INGREDIENTS

Muffin Mixture

  • 1 banana
  • ¾ cup pumpkin
  • 1 cup almond flour
  • ½ cup coconut flour
  • 3 eggs
  • 4 tbsp coconut oil
  • ¼ cup honey
  • 1 tbsp baking soda
  • 2 tbsp pumpkin spice
  • pinch of sea salt

Frosting mixture

  • ½ cup cream cheese
  • 1 tbsp pure maple syrup
  • ½ tsp cinnamon

DIRECTIONS

  1. Preheat oven to 350 degrees.
  2. Combine banana, pumpkin, eggs, melted coconut oil and honey in large bowl. Mix on medium until all ingredients are well-combined. Add dry ingredients and continue mixing one to two minutes.
  3. Spray muffin tin with nonstick spray and fill each tin three quarters of the way with mixture.
  4. Bake 25 to 30 minutes, or until edges begin to lightly brown and/or you test muffin with a fork and it comes out clean.
