Almost-Guiltless Peanut Butter Cups
Makes 8 servings
¼ cup peanut flour
½ tablespoon stevia
¼ cup + 1 tablespoon water
¼ cup unsweetened almond milk
¼ cup plain Greek yogurt
1 tablespoon stevia
¼ cup cocoa powder
2 tablespoons chocolate protein powder
Combine ingredients for chocolate layer in small bowl and stir until well-combined. Combine ingredients for peanut butter layer in separate bowl and stir until creamy. Coat mini-muffin tray with nonfat cooking spray or line with muffin cups. Pour dollop (about 1 teaspoon) of chocolate mixture into each cup, then top with an equal-size dollop of peanut butter layer. Place in freezer for two hours, or until firm. Remove and serve within five or 10 minutes. Store extra treats in zip-close baggie to enjoy later!
