“Magic” McGuinness Oatmeal Protein Balls

As featured in the January/February issue of Oxygen, Ginger McGuinness lost 75 pounds after beating breast cancer. By adopting clean eating habits and incorporating strength exercises into her programming, she entered her first bikini competition five years after her diagnosis. The recipe below is one of her favorite guilt-free snacks:

Oatmeal Protein Balls

¾ cup old-fashioned oats

¾ cup vanilla protein powder

½ cup natural peanut butter

¼ cup mini semi-sweet chocolate morsels (optional)

1-2 tablespoons chia seeds (optional)

2-3 tablespoons honey

shredded and toasted coconut, to taste

unsweetened almond milk, as needed

Add dry ingredients (except the coconut) and peanut butter to bowl and blend with spatula. Add honey and blend until evenly distributed. Form mixture into balls. If dough is too dry, add almond milk 1 tablespoon at a time until desired consistency is achieved. Roll balls in toasted coconut, and place in single layer in container lined with wax paper or parchment paper. Cover and refrigerate for several hours before serving.
