Tuna Salad Stuffed Peppers

Makes 3 Servings

  • 1 (5-ounce) can water-packed tuna, drained
  • 2 tablespoons olive oil mayonnaise
  • 2 scallions (green onions), finely chopped
  • 1 tablespoon Peppadew pepper pickling 
  • juice juice of ½ lemon 
  • 2 teaspoons fresh thyme 
  • 2 teaspoons Dijon-style mustard 
  • ¼ teaspoon black pepper salt 
  • 15 Peppadew peppers, drained

Directions:

1. Place tuna in a bowl and flake with a fork. Add mayonnaise, scallions, pickling juice, lemon juice, thyme, mustard, black pepper and a couple pinches salt to bowl and mix gently.

2. Use a small spoon to gently stuff tuna salad into peppers.
