Ingredients

  • ⅓ cup milk
  • 2 cups 2% or full-fat Greek yogurt
  • 1 cup frozen blueberries, plus more for topping
  • 2 scoops plain or vanilla protein powder
  • 2 tbsp honey
  • zest of 1 lemon
  • ¼ tsp almond extract
  • pinch salt
  • ¼ cup sliced unsalted almonds
  • 2 tbsp cacao nibs

Preparation

  1. Add milk, yogurt, blueberries, protein powder, honey, lemon zest, almond extract and salt to a blender cup and blend until smooth and thick.
  2. Line a rimmed baking sheet with parchment paper or a silicone baking mat. Spread mixture into a large 1⁄2-inch-thick rectangle and sprinkle with blueberries, almonds and cacao nibs. Freeze until solid, about 3 hours.
  3. Break bark into pieces and store in an airtight container in the freezer.
