Lemony Blueberry Smoothie Bark

Ingredients
- ⅓ cup milk
- 2 cups 2% or full-fat Greek yogurt
- 1 cup frozen blueberries, plus more for topping
- 2 scoops plain or vanilla protein powder
- 2 tbsp honey
- zest of 1 lemon
- ¼ tsp almond extract
- pinch salt
- ¼ cup sliced unsalted almonds
- 2 tbsp cacao nibs
Preparation
- Add milk, yogurt, blueberries, protein powder, honey, lemon zest, almond extract and salt to a blender cup and blend until smooth and thick.
- Line a rimmed baking sheet with parchment paper or a silicone baking mat. Spread mixture into a large 1⁄2-inch-thick rectangle and sprinkle with blueberries, almonds and cacao nibs. Freeze until solid, about 3 hours.
- Break bark into pieces and store in an airtight container in the freezer.
