Frozen bananas deliver a solid dose of potassium for healthy nerves and powerful muscle contractions. The beta carotene in sweet potatoes benefits eye health and improves cognitive function while helping reduce inflammation. And the heart-healthy monounsaturated fat found in almond butter replaces the saturated fat in a typical dairy-based dessert.

Ingredients

  • 3 frozen chopped bananas
  • 1 ½ cups cooked sweet potato, mashed and cooled to room temperature
  • ¼ cup almond butter
  • 2 tbsp pure maple syrup
  • 2 tsp vanilla extract
  • ½ tsp cinnamon
  • ½ tsp ginger powder
  • pinch salt

Preparation

  1. Place bananas in a food processor or high-powered blender. Process until bananas are reduced to the size of small pebbles. Add remaining ingredients and blend until creamy.
  2. Eat a serving immediately, or store in an airtight container in the freezer. When ready to eat, thaw 5 minutes at room temperature, or microwave in 10-second increments until softened.
